The perfect aperitif for a Friday evening, this simple savoury bread known as a ‘cake salé’ is a French classic and for good reason, it’s simple to make and deliciously moreish.
Cake salé
Ingredients
- 1 1/4 cup flour
- 1 tsp baking powder
- ½ tsp Herbs de Provence
- 3 large eggs beaten well
- ¼ cup yogurt diluted in a little milk
- 2 tbsp Extra Virgin Olive Oil
- 1 cup grated Emmental cheese
- 100 g Olives pitted
- 70 g smoked Ham diced

Pre-heat your oven to 180C. Grease and flour (I use semolina flour for a little crunch on the crust) a loaf pan well.

In a large mixing bowl, combine the flour, baking powder and herbs de provence. Make a well in the flour and mix in the beaten eggs, followed by the yoghurt and the EVOO.

Fold in the grated cheese, followed by the olives and ham cubes.

Transfer the batter into the prepared loaf pan. The batter is quite thick, so use a spatula to smooth out.

Bake for 45 minutes, until the top is golden and a knife inserted in the middle comes out clean.

Transfer to a cooling rack and wait 15 minutes before removing the loaf from the pan.
